Vanilla cream custard with berry compote

Panna Cotta

Panna Cotta Recipe:

Ingredients

  • 2 cups heavy cream
  • 1/4 cup white sugar
  • 1 vanilla bean (or 2 tsp vanilla extract)
  • 1 packet gelatin powder (2 1/4 tsp)
  • 3 tablespoons cold water
  • Mixed berries (strawberries, raspberries, blueberries)
  • 2 tablespoons sugar for compote
  • Fresh mint for garnish

Instructions

    Sprinkle gelatin over cold water in a small bowl and let stand for 5 minutes

    Split vanilla bean and scrape out seeds

  3. 3

    Heat cream, sugar, and vanilla seeds in a saucepan over medium heat

    Stir until sugar dissolves but do not boil

  5. 5

    Remove from heat and stir in softened gelatin until completely dissolved

    Strain mixture through a fine sieve into a pitcher

    Pour into 4 ramekins or serving glasses

    Refrigerate for at least 4 hours until set

    For berry compote, heat mixed berries with sugar until soft

    Mash berries lightly and let cool

    Before serving, top panna cotta with berry compote

    Garnish with fresh mint leaves
