Tartufo Bianco Recipe:
Ingredients
- ✓500g pizza dough
- ✓200g mozzarella, torn
- ✓150g fontina cheese, sliced
- ✓100g fresh mushrooms, thinly sliced
- ✓50g Parmigiano-Reggiano, grated
- ✓Fresh black truffle or truffle paste
- ✓Truffle oil
- ✓Fresh thyme
- ✓Sea salt
- ✓Semolina flour for dusting

Preheat wood-fired oven to 480°C (900°F)

Stretch pizza dough into a 12-inch round

Distribute mozzarella and fontina as the base

Arrange thinly sliced mushrooms over the cheese

Sprinkle Parmigiano-Reggiano on top

Add fresh thyme leaves and season with salt

Bake in oven for 90-120 seconds

Remove when cheeses are melted and bubbly

Immediately shave fresh black truffle over the pizza
